Smoked Fish Surprise

455g (1lb) Smoked cod or haddock fillets, fresh or defrosted, skinned and cubed
15g (1ž2oz) Butter
115g (4oz) Broccoli, cut into small florets
1 Carrot, peeled and cut into sticks
150ml (1ž4 pint) Fish or vegetable stock
170g (6oz) Pasta shapes, cooked
Pepper
2 x 15ml spoons (2 tablespoons) Single or double cream
1 x 5ml spoon (1 teaspoon) Fresh parsley, chopped

Heat the butter in a pan. Cook the broccoli and carrot for 1 minute.

Pour in the fish or vegetable stock. Add the cubed fish. Season, cover and cook for 8-10 minutes.

Add the pasta and cook for 1-2 minutes or until piping hot. Remove from the heat and stir in the cream.

4 Sprinkle with chopped parsley and serve with chunks of crusty bread.
